Mrs. Pritchett's Cornbread Dressing

My favorite thing in the world has always been Mrs. Pritchett's cornbread dressing. Mrs. Pritchett was my mothers best friend. I called her more times than I can remember asking how to make her dressing. I can still hear her words... Now Nette, I put the onions and green peppers in the blender so Corey and Sebastian (her grandsons) won't know they are in there.... wonderful memories and traditions. Mrs. Pritchett, I made your dressing this year. Momma said, now that is Mrs. Pritchett's dressing! Here is the recipe in her own writing:






Throughout their friendship, Momma and Mrs. Pritchett had a friendly feud over who was older. Her daughter, my sister and myself gave them a surprise 70th birthday party. This is a picture from that party. Momma is on the right and Mrs. Pritchett is on the left.

Jenee' - I miss you

Thank you so much for visiting our lives. Today is a very painful day for us. Thank you for sharing your time.

My sister knocked on my door, barely able to stand. Jenee' is dead she told me without breathing. No, it is not possible. She broke her leg, I said. That is it, she broke her leg. Let's go to the hospital because she broke her leg.


My precious angel did not have a broken leg. She was gone. My beautiful, darling daughter. Gone forever. Everyone said, things will get better with time. They lied. It has never gotten better. No one will ever call me Momma again. I will never have a grandchild to love and spoil. My baby is gone. There are so many things I will never experience.


I did have 20 years, 7 months and 13 days of being Momma to the greatest kid in the world. Captain of your soccer team, your passion for Wesleyan, STUNT, color wars you lived life hard. My precious, your momma misses you every day. I ache to hear your voice. I miss you so much. Thank you for bringing Doug and Mitzi, Joyce and Taylor into my life. They have been my strength the past 14 years.

Just like you brought the clouds into the balloon bouquets for Hayden, you brought them into my life to take care of me. You always take care of your Momma don't you baby?

To those who follow my blog, please don't be sad or let this post bring you down in this joyous season. Pick up your phone, call someone and tell them how much they mean to you. Go hug your husband or wife or child or niece. Look into the sky and see how beautifully my baby can turn those clouds into balloon bouquets! I am so happy and grateful for the 20 years, 7 months and 13 days I had with my baby.

If you know someone that has lost a child or anyone for that matter, give them a call. Let them talk about their loved one. Let the name of that loved one pass their lips. You will never know how much it means to them.

Thank You to our troups! We are so Grateful.

Thank you for visiting our blog! We had a wonderful day, being provided with the luxury of thanking those that protect our county. I am only sad that once things got put in place we put the camera down and got down to business! Happy Thanksgiving. This is the menu! I will be posting Mrs. Pritchett's Cornbread dressing in the next few days.
We have had the honor of serving soldiers for Thanksgiving that are in basic training off and on over 25 years. Because they had dietary restrictions, (i.e. no caffeine, limited sugar, no alcohol, etc) and because they are so homesick we have come up with this idea and it works. First, the mini dessert bar, pecan tassies, apple dumplings, mini pumpkin pies, turtle candies, caramel apple cupcakes, warm mixed fruit cookies served with cold milk in cordial glasses, mini cherry pies, and mini banana pudding.......look out hips here it comes! LOL We served buffet style, Doug fried 2 turkeys and 1 ham, mashed potatoes. I made this incredible Bruce's Yam dish courtesy of a friend of the QVC BB, cornbread dressing. Gravy, cranberry sauce, broccoli casserole. green bean casserole.

I figure that dessert should be discussed twice! Did I mention Ina Garten fruit cookies, coconut macaroons, buttermilk pie, pumpkin gingerbread trifle.....

This was the best fruit salad ever. I got the recipe from Southern Plate. I have it posted somewhere.

The little bowls next to the fruit salad are cocktail glasses. There is crushed ice on the bottom and the bowls sit on top. Keeps it nice and cold.


We decided long ago that these soldiers are homesick, so instead of a full table, we set up TV trays, decorated of course. They can take the TV trays to one of 5 rooms with either a computer, cell phone or land line and communicate with a loved one. We have unlimited long distance. I talked to 6 mommas, a few daddies, and a couple of sisters all thanking me for making their loved one a home cooked meal. Yes, I cried. I saw these cute utensil holders in the BBB flier. I found these stockings at the dollar store for 50 cents. The dishes are German and I bought them at an auction over 20 years ago.
The cute napkin holders have salt and pepper shakers in them. The flatware in the 50 cent stocking is my husband's grand mothers. The wine glass is for the Welches' Sparkling Wine. The red are from Johnson Brothers Bradbury design about 2 months ago.

I did 4 place settings in the red and 5 in the brown. Sorry I cannot read the brand or type of dishes.


Believe it or not I had some leftovers and they are allowed to take some back. I thought ahead and got to go boxes. I sorta watched who ate the most of what and loaded em up. My precious husband bought each one a phone card. Wow, I am so grateful that these brave, strong, (and handsome) young men who are protecting my country.



But then some things never change. LOL Everyone just happened to wander into the living room just in time to catch the game! I served them warm cookies and cold milk in cordial glasses. Then my sweetie took them to the hockey game. A great day was had by all! I sure wish I had bought those silver trays. Happy Thanksgiving. It was the first time Josh and Keelie had this much company. I do not who had the most fun, the dogs or the soldier. Everyone got a workout!

Leftovers - Isn't that what Thanksgiving is all about?

Leftover Ham -
FLEECHKY

leftover cooked ham
fettucini noodles
2 eggs
1/2 c. butter
salt
pepper

Dice ham; cook noodles and drain. Mix together all
ingredients in casserole. Bake at 350 degrees until top slightly
crisp.

Leftover Mashed Potatoes -

I fried some leftover ham for breakfast with mashed potaotes this morning. Yummy!

My secret weapon for the best ever sandwich ever is a mixute of mayo and mustard on one side, lettuce, turkey slices, and cranberry and cream cheese on the other. Wowza! What is your secret sandwich weapon?

Uncle Doug's Treasures

Doug has a booth in a local antique mall. He spent the weekend decorating for the holidays. Along with momma he rearranged everything and it looks lovely. He has searched out treasures from all over the Southeast. Depression glassware, lamps, dishes, bone china, crystal, waterford, you name it. He has collected Christmas decorations and displayed them beautifully. I am so proud.
Momma has a booth there also. Look how beautifully she has displayed everything.

Met Monday - Finished the dining room chairs!




First thank you for stopping by to visit. I am participating in Met Monday with the gracious Susan from Between Naps on the Porch.
I posted last week about the new to us dining room chairs. This is how they started out. My sweet husband cleaned the cushions. But still not what I wanted.

I put the cushion covers from the old chairs on them but they needed to be attached properly and straighten out. Another job poor hubby would have to do. The fabric was left over from a Christopher Lowell project we did years ago.



As usual he did a great job. You can see the Christopher Lowell project in the background.


Of course I had to give it my touch. I think it looks great!

Flashback - Rivel Soup

This soup is one of my strongest Thanksgiving memories. My dear departed Aunt and Uncle would come down from Bentonville, Ark every year and my Aunt Edith would make this soup. It is a simple soup but an deep memory.

Aunt Edith's Rivel Soup

Ingredients
1 cups all-purpose flour
1/2 teaspoon salt
1 egg, beaten
4 cups chicken broth
1 cup crushed corn kernels
Directions
Combine the flour, salt, and beaten egg and mix together with the fingers until mixture is crumbly.
Pour this mixture into the gently boiling broth, add the corn and cook about 10 minutes. Some people think rivels look like rice.

*** I wanted to add, only add the flour, salt, beaten egg mixture that is crumbly and through your fingers. If you add the whole bowl it will thicken up the soup broth too much.

Bread Machine Recipes

Some sweet friends got a new bread machine and I thought I would share some of my tried and true recipes. I hope everyone enjoys them.

Clone of a Cinabon

Ingredients:
1 cup warm milk (110 degrees F/45 degrees
C)
2 eggs, room temperature
1/3 cup margarine, melted
4 1/2 cups bread flour
1 teaspoon salt
1/2 cup white sugar
2 1/2 teaspoons bread machine yeast

1 cup brown sugar, packed
2 1/2 tablespoons ground cinnamon
1/3 cup butter, softened

1 (3 ounce) package cream cheese,
softened
1/4 cup butter, softened
1 1/2 cups confectioners' sugar
1/2 teaspoon vanilla extract
1/8 teaspoon salt
Directions:
1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
2. After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
3.Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
4.Bake rolls in preheated oven until golden brown, about 15 minutes. While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.


Russian Black Bread
Ingredients:
1 1/2 cups water
2 tablespoons cider vinegar
2 1/2 cups bread flour
1 cup rye flour
1 teaspoon salt
2 tablespoons margarine
2 tablespoons dark corn syrup
1 tablespoon brown sugar
3 tablespoons unsweetened cocoa powder
1 teaspoon instant coffee granules
1 tablespoon caraway seed
1/4 teaspoon fennel seed (optional)
2 teaspoons active dry yeast
Directions:
1.Place ingredients into the bread machine in order suggested by the manufacturer.
2.Use the whole wheat, regular crust setting.
3.After the baking cycle ends, remove bread from pan, place on a cake rack, and allow to cool for 1 hour before slicing.

This is my husband's hands down favorite. I make it so often, I have the recipe taped on the inside of my baking cabinet.

Honey Oatmeal Bread
Ingredients:
1 cup water
1 tablespoon vegetable oil
1/4 cup honey
1 teaspoon salt
1/2 cup rolled oats
2 1/3 cups bread flour
1 teaspoon active dry yeast
Directions:
1. Place ingredients in bread machine pan in the order suggested by the manufacturer.
2.Select Light Crust or Basic setting, and press Start.

This is the best recipe for bagels I have ever found. It makes a lot but they are very good.

Bread Machine Bagels
Ingredients:
1 cup warm water (110 degrees F/45
degrees C)
1 1/2 teaspoons salt
2 tablespoons white sugar
3 cups bread flour
2 1/4 teaspoons active dry yeast
3 quarts boiling water
3 tablespoons white sugar
1 tablespoon cornmeal
1 egg white
3 tablespoons poppy seeds
Directions:
1.Place water, salt, sugar, flour and yeast in the bread machine pan in the order recommended by the manufacturer. Select Dough setting.
2.When cycle is complete, let dough rest on a lightly floured surface. Meanwhile, in a large pot bring 3 quarts of water to a boil. Stir in 3 tablespoons of sugar.
3.Cut dough into 9 equal pieces, and roll each piece into a small ball. Flatten balls. Poke a hole in the middle of each with your thumb. Twirl the dough on your finger or thumb to enlarge the hole, and to even out the dough around the hole. Cover bagels with a clean cloth, and let rest for 10 minutes.
4.Sprinkle an ungreased baking sheet with cornmeal. Carefully transfer bagels to boiling water. Boil for 1 minute, turning half way through. Drain briefly on clean towel. Arrange boiled bagels on baking sheet. Glaze tops with egg white, and sprinkle with your choice of toppings.
5.Bake in a preheated 375 degree F (190 degrees C) oven for 20 to 25 minutes, until well browned.

Ima, this ones for you.

I told a sweet friend on the bulletin boards that my precious husband bought me a dining table and chairs. She has quietly and graciously encouraged us to finish this project. Well, we recovered all the chairs in fabric we already had. You can see in the background the Christopher Lowell Project we used the fabric on originally......... Ta-da! Here is is, I think it turned out great. He really got a great deal. He used fabric we already had, and this is the result:

Foodie Friday with Crockpot Onion Soup

    I am joining in Foodie Friday today. Please stop by and visit with all the posters and the wonderful creations.

  • We enjoyed French Onion Soup with our meal yesterday. Doug tried to get a picture in the crocks with melted cheese. That was not an attractive photograph. This is how yummy it looked still in the crock pot. I got this recipe a few years ago from Sharon on the HGTV website. I usually double it. Sometimes I use beef broth that I have put in the freezer. I usually use mozzerella cheese sprinkled over the bread and pop in the oven.


  • 1/2 cup butter or margarine


  • 6 beef bouillon cubes


  • 4 cups hot water


  • 1 Tbs. Worcestershire sauce


  • Sliced French bread


  • Grated Parmesan cheese


  • 3 large onions, thinly sliced


  • In large skillet, cook onions in butter until lightly browned. In the crockpot, combine browned onions in the butter, with the bouillon cubes, water, Worcestershire sauce and salt. Cover and cook on low four to six hours. Makes four servings. To serve, top each bowl of soup with a toasted slice of French bread then sprinkle with Parmesan cheese.

Let's Get ready for Thanksgiving

I try to get as much as possible ready before Thanksgiving day. I freeze these mashed potatoes and then the day before I need them, I put them in the fridge. When I need a large quantity I put them in the crock pot. Or you can bake in the oven. Either way, delish! Make Ahead Mashed Potatoes


Ingredients:
5 pounds Yukon Gold potatoes, cubed
2 (3 ounce) packages cream cheese
8 ounces sour cream
1/2 cup milk
2 teaspoons onion salt
ground black pepper to taste
Directions:
1. Preheat the oven to 325 degrees F (165 degrees C).
2. Place potatoes in a large pot of lightly salted water. Bring to a boil, and cook until tender, about 15 minutes. Drain, and mash.
3. In a large bowl, mix mashed potatoes, cream cheese, sour cream, milk, onion salt, and pepper. Transfer to a large casserole dish.
4. Cover, and bake for 50 minutes in the preheated oven.



For large crowds like Thanksgiving, I put them in the crockpot. Sometimes I have to add a little milk but they warm nicely and keep the oven free for other goodies.

Modern Tea

Thank you so much for joining me for some yummy tea. Silk Purse over at The Plumed Pen has graciously invited me to join in her weekly Tea for Two. I love tea. It warms me up, it comforts me. There is something soothing about putting the tea bag in the cup or better yet to put tea leaves in a tea ball and watching it turn into a potion of love. This is 2009, it is hard to find time for that soothing cup of tea. I missed it. But somewhere along the line someone decided that tea is a good thing. Here is my modern tea. It is soothing, it is warm. My husband got this Keurig for Christmas. He loves his coffee. But then I found I can get my tea fix also. Earl Grey, Peppermint or Chai Tea in a few seconds. Yummy! Please join me in a cup, I have Peppermint tea waiting today.

My New to Me Dining Room Chairs

This is my first attempt at Met Monday with Susan at Between Naps On The Porch so make certain you check back and see all the great projects. My sweet husband found this table, chairs and bench at an estate sale recently. Upon close inspection they were a little more used than he thought. Here is one of them:

We did a major Christopher Lowell project a few years ago, using this fabric to cover some of the dining room walls. I had these cushion covers left from my previous chairs. A huge difference don't you think? When Doug gets home he will tighten the fabric for me. I think they will be great! So now I have no excuses to finish my Tablescapes.

Happy 8th Birthday Hamlet!

Today is Hamlet's 8th Birthday. Doug surprised her with a pan of cornbread and some buttermilk first thing this morning. At first she did not want to share it with YamYam
But Hamlet decided to share! YamYam does take good care of her since she became blind.
But she had a change of heart and ate it herself!

Soldiers’ Angels is a volunteer-led 501(c)(3) non-profit organization providing aid and comfort to the men and women of the United States Army, Marines, Navy, Air Force, Coast Guard, and their families. Founded by the mother of two American soldiers, we are an international, volunteer-led organization supporting America’s men and women in uniform. With over 30 different teams and projects, our nearly 200,000 volunteers assist veterans, wounded and deployed personnel and their families in a variety of unique and effective ways.
With the shootings at Fort Hood, the Soldiers’ Angels sprang into action. I’ll have to say, that is one of things you gotta love about them, they are women (and men) of action! So, what can you do?
